*Zucchini pancakes*




°2 large zucchini (about 300 g)

° 1 onion or leek

°1 garlic clove (optional)

° Aromatic herbs: flat-leaf parsley, mint, basil or coriander

°1 egg

°1 teaspoon flour

° 2 tablespoons of liquid cream (classic or vegetable)

° salt pepper

° Paprika, Curry, Split Pepper, etc…

° Butter/oil for frying




Wash, dried & grated zucchini. Put it on a clean towel and press it well to remove the juice

Chop the onions or leeks and parsley

Mix with the grated zucchini, then add the cream and all the eggs and mix, then the flour, salt, pepper and spices and mix

Heat 20 grams of butter and a little sunflower oil in a frying pan and arrange small mounds of preparation, roll them out in the form of pancakes and cook for 3 minutes on each side, until golden brown.

Place the pancakes on absorbent paper and serve very hot
