Roasted carrots, potatoes and onions



° 2 pounds carrots



° 6 whole potatoes



° 1 whole sweet onion


° 3 garlic cloves


° 6 tablespoons olive oil


° ½ teaspoon dried thyme


° ½ teaspoon dried parsley


° Salt and pepper to taste




The oven is preheated to 475 degrees Fahrenheit.


– Peel the carrots, cut into small pieces. Cut the potatoes into small pieces, leaving the peel on. Cut the onions into eighths. Mince the garlic.



Combine carrots, potatoes and onions in a large bowl. Drizzle olive oil over vegetables and add garlic, thyme, parsley, salt (to taste) and pepper (to taste).


Stir until vegetables are covered with olive oil and spices. Place on a cookie sheet in one layer and cover with foil.


Grill for 45 minutes. Remove the foil and continue toasting for another 30 minutes or until golden brown, stirring every 10 minutes.
