Refrigerator Bread and Butter Pickles


6 cups thinly sliced cucumbers
1 cup thinly sliced onions
1 1/2 cups granulated sugar
1 cup white vinegar
1/2 cup apple cider vinegar
1 tablespoon mustard seeds
1/2 teaspoon celery seeds
1/8 teaspoon ground turmeric
1/4 cup salt
2 cups ice cubes
Prepare Cucumbers and Onions:

In a large bowl, combine 6 cups thinly sliced cucumbers and 1 cup thinly sliced onions.
Sprinkle with 1/4 cup salt and 2 cups ice cubes. Mix well and let stand for 3 hours.
Make the Brine:

In a medium saucepan, combine 1 1/2 cups granulated sugar, 1 cup white vinegar, 1/2 cup apple cider vinegar, 1 tablespoon mustard seeds, 1/2 teaspoon celery seeds, and 1/8 teaspoon ground turmeric.
Bring to a boil, stirring until the sugar dissolves.
Combine and Chill:

Drain the cucumber mixture, removing any ice.
Pour the hot brine over the cucumbers and onions. Let cool to room temperature.
Transfer to jars and refrigerate for at least 24 hours before serving.
