Mint Chocolate Banana Split Cheesecake

2 cups mint chocolate cookies, crushed
1/2 cup melted butter
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream
2 bananas, sliced
1 cup strawberries, sliced
1 cup pineapple chunks
1/2 cup mint chocolate chips
1/4 cup mint syrup
Crust: Combine crushed mint chocolate cookies with melted butter. Press into the bottom of a springform pan to form the crust. Chill in the refrigerator.
Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
Layering: Spread a layer of cheesecake filling over the crust. Add a layer of banana slices, followed by a layer of strawberries and pineapple chunks. Repeat the layers.
Top Layer: Spread the remaining cheesecake filling on top. Chill for at least 4 hours or until set.
Toppings: Before serving, top with whipped cream, mint chocolate chips, and a drizzle of mint syrup.
For a more intense mint flavor, add a few drops of mint extract to the cheesecake filling.
