Strawberry mousse cake

Ingredients for a strawberry mousse cake for 8 to 10 people:


+ Almond cookie:

°3 eggs

°80 grams of sugar

° 10 g of cornstarch

°80gm ground almonds

+ strawberry mousse:

° 4 sheets of gelatin (8 g) (you can substitute 2 g of agar-agar if necessary)

°350 grams strawberry

°40 grams icing sugar

°380 ml full fat

1. Preheat the oven to 180 ° C.

2. Separate the eggs from the yolks. Whisk the yolks with the sugar.

3. Adding cornstarch & ground almonds, mixing between every addition.

4. Beat the egg whites until stiff. Add them to the preparation. First add a good spoonful of egg white and stir vigorously to soften the mixture. Insert the rest very carefully with a spatula.

5. Pour everything into an adjustable circle with a diameter of 20 cm, put on a plate covered with baking paper.

2. Wash the strawberries and remove the peel.

3. Put the strawberries and powdered sugar in a saucepan and heat it until it boils.

4. Mix everything with an immersion blender.

5. Add the filtered gelatin. If you are using agar-agar, you will need to boil the strawberry purée with agar-agar for 1 minute. Let’s get to room temperature.

6. Beat the liquid cream until it thickens.

7. Using a spoon, gently fold the whipped cream into the strawberry puree.

8. Pour everything over the almond biscuits
