Zucchini fritters



°2 large zucchini (about 300g)


° 1 onion or leek


°1 garlic clove (optional)


° Aromatic herbs: flat-leaf parsley, mint, basil or coriander


°1 egg


°1 teaspoon flour


° 2 tablespoons of heavy cream (classic or vegan)


° salt pepper


° Paprika, curry, split pepper, etc…


° butter / oil for frying




Wash, dry and grate the zucchini. Place it in a clean towel and squeeze it well to remove the juice


Finely chop the onion or shallot and parsley


Mix with grated zucchini, then add the cream and all the eggs, mix, then flour, salt, pepper and spices and mix


Heat 20 grams of butter and a little sunflower oil in a frying pan and arrange small mounds of the preparation, flatten them into patties and cook for 3 minutes on each side, until golden brown.


Place the pancakes on absorbent paper and serve very hot
